Keto Philly Cheesesteak Casserole (with Pepper Jack Cheese)

2 Pounds Ground Beef
1 Tablespoon Olive Oil
2 Bell Peppers, seeded & sliced
1 Large Onion, chopped or sliced
4oz Cream Cheese
2 Tablespoon Heavy Whipping Cream
2 Eggs
1/2 Teaspoon Garlic Powder
1/4 Teaspoon Dried Mustard
Salt & Pepper, to taste
12 Slices Pepper Jack Cheese
Directions
- Preheat oven to 350 degrees
- Prepare a 9x13 casserole dish with non-stick cooking spray
- In a large skillet, brown ground beef over medium-high heat
- Drain ground beef and remove from skillet
- Add olive oil, peppers, and onions to skillet. Stir occasionally until softened and onions are browning
- To the skillet, add cooked ground beef, cream cheese, garlic powder, dried mustard, salt & pepper
- Stir to combine ingredients
- Add combined ingredients to casserole dish
- In a separate bowl, whisk together the eggs and heavy whipping cream
- Pour mixture over the meat mixture. Stir to combine
- Add pepper jack cheese to top of meat mixture
- Bake for 25 to 30 minutes, or until cheese is melted and bubbling
