Easy & Creamy Mashed Potatoes

Ingredients

  • 4 pounds Russet Potatoes, peeled and chopped into 2-inch pieces

  • 1/2 cup 1 stick Butter

  • 8 ounces Cream Cheese

  • 1/4 cup Grated Parmesan Cheese

  • 1 cup Sour Cream

  • 1/4 cup Heavy Cream

  • Salt

  • Water

Directions

  • Add potatoes to a large pot with enough water to cover them.
  • Add some salt to the water and bring to a boil
  • Slice the butter into 6-8 pieces
  • Cut the cream cheese into quarters
  • Add the butter, cream cheese, Parmesan cheese, sour cream and heavy cream to a large mixing bowl. Allow these ingredients to soften at room temperature while the potatoes are cooking.
  • When the potatoes are tender (15-20 minutes), drain well and add them while still hot to the mixing bowl. Whip until smooth (you can also use a mixer).
  • If the potatoes are too thick, slowly add more heavy cream (or milk) until they reach the desired consistency.
