Grandma’s Mexican Casserole

Ingredients

  • 2 Tbsp Canola Oil

  • 2 Pounds Ground Beef

  • 1 Medium Onion

  • 1 10.5 oz Can Cream of Mushroom Soup

  • 1 10.5 oz Can Cream of Chicken Soup

  • 1 10 oz Can Enchilada Sauce

  • 1 Can Green Chilies

  • 2 Tsp Chili Powder

  • Salt & Pepper to Taste

  • 8 oz Cheddar Cheese

  • 14 Corn Tortillas

  • 1 Tbsp Minced Garlic

  • 1 Tbsp Green Tabasco Sauce

Directions

  • Preheat oven to 350 degrees
  • Place canola oil in cooking pan over medium heat
  • Cook the ground beef until browned
  • Add the onions and minced garlic and let cook for a few more minutes
  • Drain the excess fat from cooking pan
  • Add the Cream of Mushroom Soup
  • Add the Cream of Chicken Soup
  • Add the Enchilada Sauce
  • Add the Green Chilies
  • Add the Chili Powder
  • Add the Green Tabasco Sauce
  • Add Salt & Pepper to taste
  • Stir together until the mixture is creamy
  • In a separate oven-safe pan, place one layer of Corn Tortilla shells that cover the bottom of the pan
  • Pour half of the mixture from the cooking pan over the Corn Tortillas
  • Add another row of Corn Tortillas
  • Add the rest of the mixture from the cooking pan over the second row of Corn Tortillas
  • Place the pan into the oven for 20 minutes and serve!
