Grandma’s Mexican Casserole

2 Tbsp Canola Oil
2 Pounds Ground Beef
1 Medium Onion
1 10.5 oz Can Cream of Mushroom Soup
1 10.5 oz Can Cream of Chicken Soup
1 10 oz Can Enchilada Sauce
1 Can Green Chilies
2 Tsp Chili Powder
Salt & Pepper to Taste
8 oz Cheddar Cheese
14 Corn Tortillas
1 Tbsp Minced Garlic
1 Tbsp Green Tabasco Sauce
Directions
- Preheat oven to 350 degrees
- Place canola oil in cooking pan over medium heat
- Cook the ground beef until browned
- Add the onions and minced garlic and let cook for a few more minutes
- Drain the excess fat from cooking pan
- Add the Cream of Mushroom Soup
- Add the Cream of Chicken Soup
- Add the Enchilada Sauce
- Add the Green Chilies
- Add the Chili Powder
- Add the Green Tabasco Sauce
- Add Salt & Pepper to taste
- Stir together until the mixture is creamy
- In a separate oven-safe pan, place one layer of Corn Tortilla shells that cover the bottom of the pan
- Pour half of the mixture from the cooking pan over the Corn Tortillas
- Add another row of Corn Tortillas
- Add the rest of the mixture from the cooking pan over the second row of Corn Tortillas
- Place the pan into the oven for 20 minutes and serve!
