Keto Broccoli Cheese Soup

Ingredients

  • 2 Cups Broccoli

  • 8 Tbsp Butter

  • 16 oz Sharp Cheddar Cheese

  • 1/2 Cup Diced Onion

  • 1/2 Cup Diced Celery

  • 3 Cups Chicken Broth

  • 1 Cup Heavy Whipping Cream

  • 1 Tsp Salt

  • 1 Tsp Pepper

  • 1 Tsp Xanthan Gum

Directions

  • Dice up broccoli
  • In a pot over medium heat, add butter, onion, celery, salt, and pepper. Cook until onions are cooked, usually a few minutes.
  • Add broccoli and cook for another 3-4 minutes
  • Add in chicken broth
  • Add in heavy whipping cream
  • Bring to a boil
  • Once at a boil, bring pot to a simmer and then slowly add in the sharp cheddar cheese
  • As cheese is melting, add in the xanthan gum
  • Stir until soup thickens
