Keto Broccoli Cheese Soup

2 Cups Broccoli
8 Tbsp Butter
16 oz Sharp Cheddar Cheese
1/2 Cup Diced Onion
1/2 Cup Diced Celery
3 Cups Chicken Broth
1 Cup Heavy Whipping Cream
1 Tsp Salt
1 Tsp Pepper
1 Tsp Xanthan Gum
Directions
- Dice up broccoli
- In a pot over medium heat, add butter, onion, celery, salt, and pepper. Cook until onions are cooked, usually a few minutes.
- Add broccoli and cook for another 3-4 minutes
- Add in chicken broth
- Add in heavy whipping cream
- Bring to a boil
- Once at a boil, bring pot to a simmer and then slowly add in the sharp cheddar cheese
- As cheese is melting, add in the xanthan gum
- Stir until soup thickens
